Yesterday was Russia Day - perfect excuse to have a Russian themed cooking lunch party today. When still occasionally eating meat, Pelmeni was one of my favourite dishes. Instead of trying to veganise it we decided to cook Wareniki. We did two dumpling versions: half filled with potatoes, the others with a mix of potatoes and mushrooms.
